1 14.5 oz. Can of small diced tomatoes
1/4 of a can of water
1 lb. of ground beef
2 cups of macaroni (or your choice of pasta)
1/2 a large yellow onion
a couple tablespoons of olive oil
salt and pepper
1 tbls paprika
a dash or two (maybe three) of Shiraca sauce
about a 1/4 c each of cheddar and hot pepper cheeses
about 2 to three tablespoons of parmesean cheese

Boil the pasta in salted water. This makes your pasta taste great. I have a friend who says: salt it like the sea (I probably don't use that much, but for 2 cups of pasta I would use about 1 tsp.)

While the pasta is boiling, rough chop the onion and sautĂ© it in the olive oil until it begins to brown.

The onions should look like this:

Onions Browning

When the onions are nice and brown, add the ground beef and fry until all the fat is cooked out of the beef. Drain the beef and onions. You can leave a little fat, but drain off most of it. add the chopped tomatoes, salt and pepper and paprika. Let everything simmer on low heat while the pasta finishes. The meat and tomatoes are ready when they have thickened up a bit. Othere things would be good in this sauce too, including maybe a few black beans, some mushrooms, or maybe some carrots.

When the pasta is drained well, add it to the sauce and give it a good stir.

On top shred some hot pepper cheese and some cheddar cheese and then sprinkle it with a little parmesean cheese.

This makes about 6 servings. I did this on purpose. You can make this and have friends over. Open a nice bottle of red wine to go with this and serve with a little french bread. Or. You can keep the other 5 servings and freeze them for easy easy work day lunches that you just pop in the microwave at work.
